Or, a new, and improved recipe for it.
I have been using the same recipe for my weekly loaves of bread long enough now that I should have it memorized. Unfortunately, I don’t. Why you ask? Because I keep tweaking it. Every single loaf is different in some way. More bread flour, and less whole wheat. More whole wheat, less bread flour. Added an egg to this loaf, but that didn’t work out at all. Added 1/4 tsp. xanthan gum, nope. Won’t do that again.
So, I have decided to make the next 4 loaves even a bit more differently. The base will always be sourdough, of course, as that’s the only bread I want to make anymore, regardless of whatever else goes into it. If I’m going to force my guts to deal with wheat flour, it needs to be given the added benefit of sourdough.
Something just came to me. I accidentally ordered millet flour when I really wanted millet whole grains, so I think I’m going to try adding some of that to the next batch. What’s the worst that could happen? If it turns out crappy, I’ll cut up the loaf, and turn it all into croutons. Or, seasoned breadcrumbs. I love breading my tilapia, or chicken, or beef cutlets in homemade bread mistakes. Very satisfying.
I try to waste as little as possible, however, I’m always forgetting something in the fridge that I was going to make into something wonderful but somehow ended up not making it. I kept getting waylaid with a rotator cuff injury here, or plantar fasciitis, or a horrendous UTI there, having no appetite for a weeks. Great weight loss program that I don’t recommend.
The last 3 loaves I’ve made have been 2/3 bread flour, with 1/3 whole wheat, and they’ve been delicious. I’m going to try the millet with bread flour next, then I’m going to mill some of my sprouted Einkorn berries again, and get back to that. Maybe mix it up with millet. I’ll let you know. Let me show you what the loaf I made last weekend looked like. It’s almost gone.


Isn’t that beautiful? I think baking bread is one of the best things I do now that I’m retired. I just wish my neighbors ate bread so I could share it with them.
